Peningkatan Kapasitas Barista dan Inovasi Mocktail Berbasis Bahan Lokal pada Desa Wisata Sangkuliman melalui Pelatihan Partisipatif

Program pengabdian kepada masyarakat ini bertujuan meningkatkan kapasitas barista pemuda dan Pokdarwis Desa Wisata Sangkuliman serta mendorong inovasi mocktail berbasis bahan lokal sebagai bagian penguatan daya tarik wisata desa. Metode pelaksanaan menggunakan pendekatan pelatihan partisipatif yang dikemas dalam workshop praktik, diskusi interaktif, simulasi mini café desa, dan evaluasi kinerja peserta selama dua hari kegiatan. Peserta kegiatan berjumlah sepuluh orang yang terdiri dari pemuda dan unsur Pokdarwis, dengan instrumen pelatihan meliputi peralatan manual brew, mesin espresso, bahan mocktail lokal, serta lembar observasi dan penilaian performa. Hasil kegiatan menunjukkan seluruh peserta mampu menguasai keterampilan dasar penyeduhan kopi dan pelayanan minuman, serta berhasil menghasilkan lima varian mocktail berbasis bahan lokal desa. Observasi kegiatan juga mencatat peningkatan kepercayaan diri peserta, keterlibatan aktif selama pelatihan, serta munculnya inisiatif pengembangan usaha minuman desa. Secara kuantitatif, program menghasilkan sepuluh SDM terlatih dengan proyeksi potensi omzet kedai mencapai Rp750.000 per hari, sedangkan secara kualitatif kegiatan memperkuat kesiapan Pokdarwis dalam diversifikasi produk wisata. Dengan demikian, pelatihan partisipatif barista dan mocktail terbukti menjadi langkah awal yang efektif dalam penguatan kapasitas masyarakat dan pengembangan pengalaman wisata berbasis minuman lokal di Desa Wisata Sangkuliman.
